Zucchini - Shrimp Scampi

Zucchini - Shrimp Scampi A tasty way to get your veggies.

4 medium zucchini
3 cloves garlic, minced
1 tablespoon olive oil
1 pound large shrimp, peeled and deveined
1/2 teaspoon dry Cajan pepper
1/4 cup chicken broth
2 tablespoon lemon juice
1 small bunch parsley, discard stems, leaving leaves

  1. Use a course grater to grate the full length of zucchini, rotating the zucchini to work toward the seeds at center. Discard seeds. You are making long zucchini noodles. Set aside.
  2. Prepare garlic.
  3. Clean shrimp.
  4. In a large skillet, heat oil over medium to low heat.
  5. Add shrimp, garlic, and Cajan pepper. Saute about 3 minutes until the shrimp turns pink.
  6. Add broth and lemon and bring to a simmer.
  7. Add zucchini and stir until all is mixed.
  8. Garnish with parsley.
  9. Serve, enjoy, refrigerate leftovers.

Serves 4.
