Zucchini Muffins #1 This makes muffins, it can make bread. People joke about growing too many zucchini. I've never had the problem but if you do, here is something to use them in.

1 1/3 cup sugar
2 eggs, beaten
2 teaspoon vanilla
3 cups grated zucchini
2/3 cup unsalted butter, melted
2 cups all-purpose flour
1 cup stone-ground whole wheat flour
2 teaspoon backing soda
2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup Optional walnuts or pecans
1 cup Optional blueberries, raisins or cranberries

  1. In a large bowl, combine sugar, eggs, vanilla.
  2. Stir in zucchini.
  3. Stir in butter.
  4. In another bowl, combine flour, backing soda, cinnamon, and nutmeg.
  5. Add the dry ingredient blend into the liquid ingredient blend and blend.
  6. Add optional nuts, raisins, cranberries if desired.
  7. Preheat oven to 350 degree Fahrenheit or (175 C)
  8. If using muffin tin without papers, use cook spray, or use muffin papers. About 15 muffins.
  9. Spoon batter into muffin tins, evenly distributed.
  10. Bake on middle rack for about 25 to 30 minutes until golden brown and tops are springy. Test to see that center is done.
  11. Cool on rack.

Makes about 18-24 muffins, depending on optional fillings.
